Ingredients
2 tablespoons extra-virgin olive oil
1¼ pounds skinless center-cut salmon fillet cut into 1-inch pieces
8 cloves garlic thinly sliced divided
¾ teaspoon salt divided
½ teaspoon crushed red pepper
5 cups broccoli florets
2 medium red bell peppers seeded and chopped 2 cups
1 tablespoon water
1 teaspoon grated orange zest
1½ tablespoons orange juice
1 tablespoon reduced-sodium tamari
1 tablespoon thinly sliced scallions
Instructions
- Heat the olive oil in a large skillet over medium heat.
- Add the sliced garlic and cook until fragrant, about 1 minute.
- Season the salmon pieces with salt and crushed red pepper, then add them to the skillet.
- Cook the salmon for about 3-4 minutes on each side, or until cooked through.
- Stir in the broccoli and red bell peppers, adding water, orange zest, orange juice, and tamari. Cook for another 5-7 minutes, stirring occasionally until the vegetables are tender.
- Garnish with scallions before serving.
Notes
