Ingredients
4 boneless skinless chicken breasts (or thighs)
salt and pepper
1 cup chicken broth
2 tablespoons lemon juice
1 tablespoon minced garlic
½ teaspoon red pepper flakes (or more to taste)
1 tablespoon olive oil
⅓ cup finely diced shallots (or red onions)
2 tablespoons salted butter
¼ cup heavy cream
2 tablespoons chopped parsley or basil
Prepared broccolini
for serving
Instructions
- Season the chicken breasts with salt and pepper on both sides.
- In a large skillet, heat the olive oil over medium-high heat and add the chicken. Cook for about 6-7 minutes on each side, or until golden brown and cooked through. Remove the chicken from the skillet and set aside.
- In the same skillet, add the shallots and garlic, cooking until fragrant, about 2 minutes.
- Stir in the chicken broth, lemon juice, and red pepper flakes. Bring to a simmer and reduce by half, about 5 minutes.
- Lower the heat and add the butter and heavy cream, stirring until well combined and creamy.
- Return the chicken to the skillet and spoon the sauce over it. Let it cook for an additional 2-3 minutes to heat through.
- Serve the chicken with prepared broccolini and garnish with chopped parsley or basil.
Notes
You can adjust the amount of red pepper flakes based on your heat preference. This dish pairs well with a side of rice or pasta to soak up the delicious sauce.
