Description

One-pan Lemon Garlic Chicken and Potatoes is a flavorful, easy-to-make dish that’s perfect for a weeknight dinner. The combination of lemon, garlic, and herbs complements the juicy chicken and tender potatoes, all cooked together in one pan for simple cleanup.


Ingredients

½ cup (125 ml) olive oil

1 tbsp dried oregano

1 tbsp freshly minced garlic

Zest of 1 lemon

plus the juice of 2 lemons (¼ cup/60 ml of lemon juice)

1 tbsp sweet paprika

1 tsp dijon mustard

1 tsp sugar

1.5 tsp sea salt flakes

½ tsp freshly cracked black pepper

1.2 kg (2 lb 10 oz) bone-in

skin-on chicken thigh cutlets

6 medium all-purpose potatoes

cut into wedges

½ cup (125 ml) chicken stock

1 lemon

sliced (optional)

1 tbsp fresh oregano or parsley

to garnish

Steamed greens or green salad

to serve


Instructions

  • Preheat the oven to 200°C (400°F).
  • In a large bowl, whisk together olive oil, dried oregano, minced garlic, lemon zest, lemon juice, paprika, dijon mustard, sugar, salt, and pepper.
  • Add the chicken cutlets to the bowl and coat well with the marinade.
  • In a large baking dish, arrange the potato wedges and pour the chicken stock over them.
  • Place the marinated chicken on top of the potatoes and pour any remaining marinade over everything.
  • Add lemon slices on top if using.
  • Bake in the preheated oven for 30-35 minutes or until the chicken is cooked through and the potatoes are tender.
  • Garnish with fresh oregano or parsley before serving with steamed greens or a green salad.

Notes

For gluten-free, ensure the chicken stock is gluten-free; serve with your choice of greens for a complete meal.
