1 lb asparagus trimmed
4 cloves garlic minced
1/4 cup olive oil
1 teaspoon dried oregano
1/2 teaspoon salt
1/4 teaspoon black pepper
2 tablespoons lemon juice
2 tablespoons chopped fresh parsley
Instructions
- Preheat your oven to 400°F (200°C).
- In a large mixing bowl, combine the potatoes, asparagus, minced garlic, olive oil, dried oregano, salt, and black pepper. Toss well to coat.
- Spread the mixture evenly on a large baking sheet in a single layer.
- Roast in the preheated oven for about 25-30 minutes, or until the potatoes are tender and golden, stirring halfway through.
