Ingredients

1 lb boneless
skinless chicken thighs or breasts
1 cup long-grain rice
2 cups chicken broth
½ cup BBQ sauce
¼ cup honey
1 tsp garlic powder
1 tsp onion powder
½ tsp smoked paprika
Salt and pepper to taste
1 cup mixed vegetables
Chopped green onions or parsley (optional
for garnish)
Instructions
- In a large pan, combine the chicken, rice, chicken broth, BBQ sauce, honey, garlic powder, onion powder, smoked paprika, salt, and pepper. Stir to mix everything well.
- Bring the mixture to a boil over medium-high heat. Once boiling, reduce heat to low, cover, and simmer for about 20 minutes.
- After 20 minutes, add the mixed vegetables on top without stirring, cover, and cook for an additional 10 minutes or until the rice is tender and the chicken is cooked through.
- Remove from heat and let it sit covered for another 5 minutes before fluffing the rice with a fork. Garnish with chopped green onions or parsley if desired.
Notes
For a spicier kick, consider adding a dash of cayenne pepper or hot sauce to the BBQ sauce.
