Ingredients
2 cups graham cracker crumbs
1/2 cup unsalted butter

1 teaspoon vanilla extract
24 oz (680g) cream cheese

1 cup powdered sugar
1 teaspoon vanilla extract
1 cup whipped cream
1 cup chopped fresh strawberries
1 cup crushed graham crackers
1/2 cup sliced almonds
1/4 cup granulated sugar
1/4 cup unsalted butter
melted
1 cup fresh strawberries
sliced
Instructions
- In a medium bowl, combine graham cracker crumbs, melted butter, granulated sugar, and vanilla extract for the crust. Press mixture into the bottom of a 9-inch springform pan.
- In a large bowl, beat softened cream cheese with powdered sugar and vanilla extract until smooth and creamy. Fold in whipped cream and chopped strawberries gently.
- Spread the cheesecake filling over the crust in the springform pan. Refrigerate for at least 4 hours or until set.
- For the strawberry crunch topping, combine crushed graham crackers, sliced almonds, granulated sugar, and melted butter in a bowl. Mix until combined.
- Once the cheesecake is set, remove it from the pan and top with the strawberry crunch mixture and sliced fresh strawberries.
Notes
For best results, refrigerate the cake overnight to enhance the flavors and texture. You can also substitute almonds with other nuts or omit them for a nut-free version.
