Ingredients
1 1/2 cups graham cracker crumbs
1/4 cup granulated sugar
1/2 cup unsalted butter melted
3 packages (8 oz each) cream cheese softened
1 cup granulated sugar
3 large eggs
1 cup sour cream
1 teaspoon vanilla extract
1/2 cup orange juice
Zest of 1 orange
1 cup whipped cream
1/2 cup pineapple chunks
1/2 cup mandarin orange slices
Fresh mint leaves and berries for garnish
Instructions
- In a bowl, mix graham cracker crumbs, 1/4 cup sugar, and melted butter until combined.
- Press the mixture into the bottom of a springform pan to create the crust.
- In a large bowl, beat the softened cream cheese with 1 cup sugar until smooth.
- Add eggs one at a time, mixing well after each addition.
- Mix in sour cream, vanilla extract, orange juice, and orange zest until well combined.
- Gently fold in whipped cream until fully incorporated.
- Pour half of the cheesecake mixture over the crust.
- Swirl pineapple chunks and mandarin oranges into the remaining cheesecake mixture, then layer it on top.
- Chill in the refrigerator for at least 4 hours or until set.
- Garnish with fresh mint leaves and berries before serving.
Notes
For best results, chill overnight. Adjust sweetness by adding more sugar if desired.
