Ingredients
1/2 cup butter
1/3 cup cocoa
1/4 cup sugar
1 egg
2 cups graham cracker crumbs
3/4 cup shredded coconut
1/4 cup butter
2 cups powdered icing sugar
2–3 tablespoons milk
1 teaspoon mint extract
green food coloring
2/3 cup chocolate chips or chopped chocolate
2 tablespoons butter
Instructions
- In a saucepan, melt 1/2 cup butter over medium heat. Stir in cocoa and sugar until blended.
- Remove from heat and whisk in the egg until smooth. Stir in graham cracker crumbs and shredded coconut.
- Press the mixture into a greased 8×8 inch pan to form the base.
- In a mixing bowl, beat together 1/4 cup butter, powdered sugar, milk, mint extract, and a few drops of green food coloring until creamy. Spread the mint filling over the base.
- For the ganache, melt the chocolate chips and 2 tablespoons of butter together in a microwave-safe bowl in 30-second intervals, stirring until smooth.
- Pour the ganache over the mint layer and spread evenly. Refrigerate for at least 30 minutes until set.
- Cut into squares, serve, and enjoy!
Notes
Allow the bars to cool completely for best texture before cutting. Adjust mint extract to your taste preference.
