Indulge in the rich and gooey texture of my favorite chocolate molten lava cakes, perfect for any chocolate lover.
Ingredients

2 to 3 tablespoons butter
softened
2 to 3 tablespoons unsweetened cocoa powder
1 cup (170 g) chopped semisweet or bittersweet chocolate
10 tablespoons salted butter
Pinch of salt
about 1/8 teaspoon
½ teaspoon vanilla extract
3 large eggs
3 large egg yolks
1 ½ cups (171 g) powdered sugar
½ cup (71 g) all-purpose flour
Instructions
- Preheat your oven to 425°F (220°C) and grease four ramekins with softened butter, then dust with cocoa powder.
- In a microwave-safe bowl, melt the chopped chocolate and salted butter together until smooth, stirring every 30 seconds.
- Add a pinch of salt and vanilla extract to the chocolate mixture, mixing well.
- In a separate bowl, whisk together the eggs and egg yolks until frothy, then gradually add in powdered sugar, mixing until combined.
- Pour the melted chocolate mixture into the egg mixture and combine.
- Sift in the flour and fold gently until just combined.
- Divide the batter evenly among the prepared ramekins.
- Bake for 12 to 14 minutes until the edges are firm but the center remains soft.
- Let them cool for 1 minute, then carefully invert onto plates and serve immediately.

For best results, serve these cakes warm to enjoy the oozing chocolate center.
