Baby potatoes
Dijon mustard

Instructions
- Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper.
- In a mixing bowl, combine 2 tablespoons each of Dijon mustard, yellow mustard, and whole-grain mustard. Add melted butter, honey, minced garlic, paprika, chili flakes, salt, and pepper. Mix until well combined.
- Cut the baby potatoes in half and add them to the bowl. Toss until the potatoes are evenly coated in the mustard glaze.
- Spread the coated potatoes in a single layer on the prepared baking sheet.
- Bake for 25-30 minutes, or until golden brown and crispy, flipping halfway through for even cooking.
- Remove from the oven and sprinkle with fresh herbs before serving.
Notes
For a dairy-free version, substitute butter with olive oil. Adjust the spice level by modifying the amount of paprika and chili flakes according to your taste.
