12 medjool dates

pitted

6 tablespoons coconut butter

3 oz semisweet or dark chocolate

Optional: more shredded coconut for topping


Instructions

  • In a bowl, mix the shredded coconut and coconut butter until well combined.
  • Take a pitted medjool date and stuff it with a tablespoon of the coconut mixture.
  • Repeat until all dates are filled.
  • Melt the chocolate in a microwave or double boiler until smooth.
  • Dip each filled date into the melted chocolate and place it on a parchment-lined baking sheet.
  • Optional: Sprinkle additional shredded coconut on top before the chocolate sets.
  • Refrigerate until the chocolate hardens, then serve and enjoy!
