Description
Deliciously chewy coconut treats inspired by the classic Mounds Bar, these Mounds Bar Dates are an easy and indulgent dessert made with medjool dates, coconut butter, and chocolate.

4 cups unsweetened shredded coconut
12 medjool dates
pitted
6 tablespoons coconut butter
3 oz semisweet or dark chocolate
Optional: more shredded coconut for topping
Instructions
- In a bowl, mix the shredded coconut and coconut butter until well combined.
- Take a pitted medjool date and stuff it with a tablespoon of the coconut mixture.
- Repeat until all dates are filled.
- Melt the chocolate in a microwave or double boiler until smooth.
- Dip each filled date into the melted chocolate and place it on a parchment-lined baking sheet.
- Optional: Sprinkle additional shredded coconut on top before the chocolate sets.
- Refrigerate until the chocolate hardens, then serve and enjoy!
Notes
For a creamier texture, make sure the coconut butter is soft. Adjust the sweetness by using different types of chocolate.
