1/2 teaspoon ground cinnamon
1/2 teaspoon ground ginger
1/4 teaspoon ground cloves
1/4 teaspoon salt
1/2 cup unsalted butter softened
1 cup packed brown sugar
1/2 cup molasses
1 large egg
1/4 cup granulated sugar for rolling
Instructions
- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a bowl, whisk together the flour, baking soda, cinnamon, ginger, cloves, and salt.
- In a separate bowl, cream the softened butter and brown sugar until light and fluffy.
- Beat in the molasses and egg until well combined.
- Gradually add the dry ingredients to the wet mixture and mix until just combined.
- Scoop tablespoons of dough and roll them into balls, then roll in granulated sugar.
- Place the dough balls on the prepared baking sheet, spacing them apart.
- Bake for 10-12 minutes, or until the cookies are set but still soft in the middle.
- Let them cool for a few minutes on the baking sheet before transferring to a wire rack to cool completely.
Notes
For an extra kick, consider adding a pinch of black pepper to the spice mixture.
