1 tablespoon coconut oil or vegetable shortening (for smoother coating)

Instructions

Prepare the Oreos:
Pulse mint Oreos in a food processor until finely crushed. If no food processor is available, crush them in a zip-top bag using a rolling pin. Set aside a few crumbs for garnish.

Mix with Cream Cheese:
Add softened cream cheese and peppermint extract to the crushed Oreos. Mix with a hand mixer or spatula until fully blended into a thick, dough-like texture.

Shape the Truffles:
Line a baking sheet with parchment paper. Roll 1-tablespoon portions of dough into smooth balls. Place on the baking sheet and chill for 30 minutes (or 15 minutes in the freezer).

Melt the Chocolate:
In a microwave-safe bowl, melt chocolate and coconut oil in 20–30 second intervals, stirring between each until smooth. Avoid overheating.

Coat the Truffles:
