1 cup (220 g) packed brown sugar
2 large eggs
2 tsp pure peppermint extract
3 cups (360 g) all-purpose flour
1 tsp baking soda
1/2 tsp salt
2 cups (340 g) semi-sweet chocolate chips
1 cup (175 g) mint chocolate chips (optional)
Instructions
- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a large mixing bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy.
- Add the eggs, one at a time, mixing well after each addition, followed by the peppermint extract.
- In another bowl, whisk together the flour, baking soda, and salt.
- Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
- Fold in the semi-sweet chocolate chips and, if using, the mint chocolate chips.
- Scoop tablespoon-sized portions of dough onto the prepared baking sheet, spacing them about 2 inches apart.
- Bake in the preheated oven for 10-12 minutes, or until the edges are lightly golden.
- Allow the cookies to cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
Notes
For an extra minty kick, you can increase the amount of peppermint extract. Store cookies in an airtight container to keep them fresh.
