1 cup plain yogurt

½ cup milk

½ cup mild flavored oil or melted butter

3 large eggs

2 teaspoons vanilla extract

2 cups all-purpose flour

½ cup light brown sugar

1 teaspoon baking soda

½ teaspoon salt

¼ cup rainbow sprinkles


Instructions

  • Preheat your oven to 350°F (175°C) and line a mini muffin tin with paper liners.
  • In a large bowl, whisk together the plain yogurt, milk, oil or melted butter, eggs, and vanilla extract until well combined.
  • In another bowl, mix together the all-purpose flour, light brown sugar, baking soda, and salt.
  • Gradually add the dry ingredients to the wet ingredients, stirring until just combined.
  • Gently fold in the rainbow sprinkles.
  • Spoon the batter into the prepared muffin tin, filling each cup about 2/3 full.
  • Bake for 15-20 minutes, or until a toothpick inserted into the center comes out clean.
  • Allow the muffins to cool in the tin for 5 minutes before transferring them to a wire rack to cool completely.
