Description

Mini Easter Cheesecake Jars are a delightful no-bake spring dessert, perfect for celebrating Easter with a cute and delicious treat that’s easy to assemble.


Ingredients

1 1/2 cups graham cracker crumbs (or digestive biscuits)

5 tablespoons unsalted butter (melted)

2 tablespoons sugar

pinch of salt

12 oz cream cheese (softened)

1/2 cup powdered sugar

1 teaspoon vanilla extract

1 tablespoon lemon juice

1 cup cold heavy whipping cream

a few drops of gel food coloring (pastel shades)

lemon zest or almond extract to taste

mini chocolate eggs or jelly beans

pastel sprinkles

shredded coconut (optional

dyed green for ‘grass’)


Instructions

  • In a mixing bowl, combine the graham cracker crumbs, melted butter, sugar, and salt to make the crust. Mix until crumbly and press into the bottom of small jars.
  • In another bowl, beat the softened cream cheese until smooth. Gradually add the powdered sugar, vanilla extract, lemon juice, and mix until well combined.
  • In a separate bowl, whip the heavy cream until stiff peaks form. Gently fold the whipped cream into the cream cheese mixture until fully incorporated.
  • If desired, add a few drops of gel food coloring to the filling and mix until achieving the desired pastel shade.
  • Spoon or pipe the cheesecake filling into the jars over the crust.
  • Chill the jars in the refrigerator for at least 30 minutes to set.
  • Before serving, top each jar with mini chocolate eggs or jelly beans, pastel sprinkles, and shredded coconut for a grassy look, if desired.
