¾ cup white sugar

2 whole eggs

Instructions

  • Preheat your oven to 325°F (160°C) and line a muffin tin with cupcake liners.
  • In a bowl, crush vanilla wafers to create the crust, and place a tablespoon of the crumbs into each liner.
  • In another bowl, beat the cream cheese until smooth. Add sugar, eggs, and vanilla extract, mixing until fully combined.
  • Pour the cheesecake mixture over the crust in each muffin liner, filling them about 3/4 full.
  • Bake in the preheated oven for 25-30 minutes, or until the centers are set.
  • Allow to cool, then refrigerate for at least 2 hours before serving.
  • Top with your favorite canned pie filling before serving.

Notes

For best results, ensure all ingredients are at room temperature before mixing. You can use any canned pie filling you prefer as a topping.
