Ingredients
2 tablespoons extra virgin olive oil

4 cups cherry or grape tomatoes
halved
4 cloves garlic
finely chopped
1/2 tablespoon dried oregano
1 cup green olives
pitted and chopped
4 tilapia fillets
1/3 cup crumbled feta cheese
Salt and freshly ground black pepper
to taste
Chopped fresh parsley
for garnish
Instructions
- Preheat your oven to 400°F (200°C).
- In a skillet, heat 1 tablespoon of olive oil over medium heat. Add the halved tomatoes and garlic, cooking until the tomatoes begin to soften, about 5-7 minutes.
- Stir in the dried oregano and chopped olives. Season with salt and pepper to taste. Remove from heat.
- In a baking dish, place the tilapia fillets and drizzle with the remaining olive oil. Season with salt and pepper.
- Spoon the tomato and olive mixture over the tilapia fillets. Sprinkle the crumbled feta cheese on top.
- Bake in the preheated oven for 20-25 minutes, or until the fish flakes easily with a fork.
- Garnish with chopped parsley before serving.
