Ingredients
Boneless and skinless chicken breasts
Flour
Salt
Pepper
Olive oil
Roasted artichoke hearts
Sun-dried tomatoes
Capers
Lemon juice
Almond milk
Fresh parsley
Instructions
- Season the chicken breasts with salt and pepper, then lightly coat them in flour.
- In a skillet, heat olive oil over medium heat and cook the chicken until golden brown on both sides and cooked through, about 6-7 minutes per side.
- Remove the chicken from the skillet and set aside. In the same skillet, add the roasted artichoke hearts and sauté for 2-3 minutes.
- Add the sun-dried tomatoes and capers to the skillet, mixing well.
- Pour in the lemon juice and almond milk, stirring to combine and create a sauce.
- Return the chicken to the skillet, spooning the sauce over it, and let simmer for an additional 5 minutes to meld the flavors.
- Garnish with fresh parsley before serving.
Notes
Feel free to substitute chicken thighs for the breasts and adjust the seasonings to your taste. Capers are optional if you prefer a milder flavor.
