Ingredients
4 large eggs
½ cup feta cheese
crumbled
1 cup cherry tomatoes
halved
2 tablespoons olive oil
1 small red onion
finely chopped
1 garlic clove
minced
¼ teaspoon crushed red pepper flakes (optional)
½ teaspoon dried oregano or Italian seasoning
Salt and black pepper to taste
Fresh parsley or basil for garnish
Crusty bread or pita for serving
Instructions
- Preheat your oven to 375°F (190°C).
- In an oven-safe skillet, heat olive oil over medium heat and sauté the red onion and garlic until soft.
- Add the cherry tomatoes, crushed red pepper flakes, dried oregano, salt, and black pepper, cooking until the tomatoes start to soften.
- Create four small wells in the mixture and gently crack an egg into each well.
- Sprinkle crumbled feta cheese over the top.
- Transfer the skillet to the preheated oven and bake for 20-25 minutes, or until the eggs are set to your liking.
- Garnish with fresh parsley or basil, and serve with crusty bread or pita.
Notes
For a spicier kick, add more crushed red pepper flakes. You can substitute the feta with goat cheese if preferred.
