6 English muffins *Thomas’ Light Multigrain muffins
6 large eggs
½ cup liquid egg whites
½ cup 2% cottage cheese
salt & pepper to taste
12 slices Sargento thin cheddar slices
12 slices Canadian bacon
6 tsp buttery spread
olive oil spray
Instructions
- Preheat your oven to 350°F (175°C) and prepare a muffin tin by spraying it with olive oil spray.
- In a mixing bowl, whisk together the large eggs, liquid egg whites, cottage cheese, salt, and pepper until well combined.
- Pour the egg mixture into the muffin tin, filling each cup about halfway.
- Bake in the preheated oven for 20 minutes or until the egg muffins are set.
- While the eggs are baking, heat a skillet over medium heat. Cook the Canadian bacon for about 1-2 minutes on each side until heated through.
- Once the eggs are ready, remove them from the oven and let them cool for a few minutes before carefully removing them from the muffin tin.
- Assemble each McMuffin by spreading 1 tsp of buttery spread on the bottom half of the English muffin, adding a slice of cheddar cheese, a slice of Canadian bacon, and an egg muffin top.
- Top with the other half of the English muffin and serve immediately, or wrap them up for meal prep.
