Ingredients
1 tbsp unsalted butter
1 tbsp oil from sun-dried tomato jar or regular olive oil
4 cloves garlic finely minced
1.5 cups chicken broth low sodium
1.5 cups heavy cream
1/2 cup sun-dried tomatoes in oil drained and chopped
1/2 tsp dried oregano
1/4 tsp red pepper flakes or more
to taste
20 oz refrigerated cheese tortellini
3/4 cup Parmesan cheese freshly grated
plus more for serving
3 cups fresh spinach packed
Salt and freshly ground black pepper to taste
1/4 cup fresh basil chopped
for garnish
Instructions
- In a large skillet, melt the unsalted butter and the oil over medium heat.
- Add minced garlic and sauté until fragrant, about 1 minute.
- Pour in the chicken broth and bring to a simmer.
- Stir in heavy cream, sun-dried tomatoes, oregano, and red pepper flakes.
- Reduce heat and let the sauce simmer for 5-7 minutes until thickened slightly.
- Add the tortellini and cook according to package instructions until al dente.
- Stir in Parmesan cheese and spinach until the spinach wilts.
- Season with salt and pepper to taste, and garnish with fresh basil before serving.
Notes
For a spicier kick, feel free to add more red pepper flakes. This dish pairs well with a crisp salad.
