Ingredients

4 salmon fillets (about 6 oz each)

1/4 cup pure maple syrup

2 tablespoons soy sauce (or tamari for gluten-free)

1 tablespoon Dijon mustard

1 tablespoon olive oil

1 clove garlic (minced)

salt and pepper (to taste)

2 cups carrots (peeled and cut into sticks)

2 cups parsnips (peeled and cut into sticks)

1 cup sweet potatoes (peeled and cubed)

2 tablespoons olive oil

1 teaspoon dried thyme (or fresh thyme)

salt and pepper (to taste)


Instructions

  • Preheat your oven to 400 degrees F (200 degrees C).
  • In a small bowl, whisk together the maple syrup, soy sauce, Dijon mustard, olive oil, minced garlic, salt, and pepper.
  • Place the salmon fillets in a baking dish and pour the maple glaze over them, letting them marinate for about 15 minutes.
  • While the salmon marinates, prepare the vegetables by tossing the carrots, parsnips, and sweet potatoes with olive oil, thyme, salt, and pepper.
  • Spread the vegetables on a baking sheet and roast in the oven for 20 minutes.
  • After 20 minutes, remove the vegetables from the oven and push them to one side of the baking sheet. Place the marinated salmon fillets on the other side.
  • Return the baking sheet to the oven and bake for an additional 10-15 minutes, or until the salmon is cooked through and flakes easily with a fork.
  • Serve the salmon alongside the roasted root vegetables and drizzle any remaining glaze over the top.

Notes

For extra flavor, let the salmon marinate longer if you have time. This recipe is easily adaptable with different root vegetables based on your preference.
