Instructions
- Preheat your oven to 400°F (200°C).
- Peel and dice the sweet potatoes, then toss them with olive oil and garlic powder on a baking sheet.
- Roast the sweet potatoes in the oven for about 25-30 minutes, or until tender and golden.
- While the sweet potatoes are roasting, mix maple syrup and Dijon mustard in a bowl to create the marinade.
- Coat the chicken breasts in the maple-Dijon marinade and let it sit for a few minutes.
- In a skillet over medium heat, cook the marinated chicken for about 6-7 minutes on each side until fully cooked.
- Prepare quinoa or brown rice according to package instructions as a base for your bowl.
- Assemble the bowls by layering the quinoa or rice, roasted sweet potatoes, and sliced chicken. Garnish with fresh herbs.

Feel free to swap out sweet potatoes for butternut squash or carrots, and use chicken thighs for added flavor.
