Ingredients
8 yellow summer squash
thinly sliced
1 small yellow onion
thinly sliced
1 large egg
lightly beaten
1 cup low-fat sour cream
1 sleeve buttery round crackers (such as Ritz®)
crushed
divided
2 cups shredded sharp Cheddar cheese
divided
Instructions
- Preheat your oven to 350°F (175°C).
- In a large bowl, combine the sliced yellow squash, onion, beaten egg, and sour cream. Mix until well combined.
- Stir in 1 cup of the shredded Cheddar cheese and half of the crushed crackers.
- Transfer the mixture to a greased baking dish and top with the remaining cheese and crushed crackers.
- Bake for 30 minutes, or until the casserole is bubbly and golden on top.
Notes
For added flavor, consider incorporating herbs like thyme or oregano. You can also substitute zucchini for some of the squash.
