1 small yellow onion

1 cup low-fat sour cream

1 sleeve buttery round crackers (such as Ritz®)

2 cups shredded sharp Cheddar cheese

Instructions

  • Preheat your oven to 350°F (175°C).
  • In a large bowl, combine the sliced yellow squash, onion, beaten egg, and sour cream. Mix until well combined.
  • Stir in 1 cup of the shredded Cheddar cheese and half of the crushed crackers.
