These Lunchbox Pizza Muffins are easy to make, freezer-friendly, and perfect for kids! Packed with gooey cheese and pepperoni, they make a great meal or snack.
Ingredients

1¼ cup all-purpose flour
1 teaspoon baking powder
1 teaspoon Italian seasoning
2 large eggs
1 cup whole milk
â…“ cup pizza sauce (plus more for dipping)
1 cup shredded mozzarella cheese
â…“ cup mini pepperoni (or finely chopped regular)
Instructions
- Preheat your oven to 350°F (175°C) and grease a muffin tin.
- In a large bowl, mix together the flour, baking powder, and Italian seasoning.
- In another bowl, whisk the eggs and milk together, then stir in the pizza sauce.
- Combine wet and dry ingredients, then fold in the mozzarella and mini pepperoni.
- Spoon the mixture into the prepared muffin tin, filling each cup about ¾ full.
- Bake for 25 to 30 minutes or until golden brown and a toothpick comes out clean.
- Let cool slightly before removing from the tin. Serve with extra pizza sauce for dipping.
Notes
These muffins can be stored in the freezer for up to 3 months. Reheat in the microwave for quick snacks!
