Description

These Lunchbox Pizza Muffins are easy to make, freezer-friendly, and perfect for kids! Packed with gooey cheese and pepperoni, they make a great meal or snack.


Ingredients

1¼ cup all-purpose flour

1 teaspoon baking powder

1 teaspoon Italian seasoning

2 large eggs

1 cup whole milk

â…“ cup pizza sauce (plus more for dipping)

1 cup shredded mozzarella cheese

â…“ cup mini pepperoni (or finely chopped regular)


Instructions

  • Preheat your oven to 350°F (175°C) and grease a muffin tin.
  • In a large bowl, mix together the flour, baking powder, and Italian seasoning.
  • In another bowl, whisk the eggs and milk together, then stir in the pizza sauce.
  • Combine wet and dry ingredients, then fold in the mozzarella and mini pepperoni.
  • Spoon the mixture into the prepared muffin tin, filling each cup about ¾ full.
  • Bake for 25 to 30 minutes or until golden brown and a toothpick comes out clean.
  • Let cool slightly before removing from the tin. Serve with extra pizza sauce for dipping.
