Ingredients
For the Pasta:
12 oz (340g) penne or rotini pasta
Salt, for the pasta water
For the Bacon and Ground Beef:
6 strips of bacon, chopped into small pieces
1 lb (450g) ground beef (lean or regular)
1 small onion, finely chopped
2 cloves garlic, minced
For the Alfredo Sauce:
1/2 cup (1 stick) unsalted butter
2 cups heavy cream
1 cup grated Parmesan cheese
1/2 cup shredded sharp cheddar cheese
Salt and black pepper, to taste
1 teaspoon Dijon mustard (optional)
1 tablespoon Worcestershire sauce (optional)
For Toppings:
1 cup shredded mozzarella cheese (optional for extra cheesiness)
Chopped green onions, for garnish
Pickles, sliced (optional)
Ketchup and mustard, for drizzling (optional)
Instructions
Prepare the Pasta
Bring a large pot of salted water to a boil. Add pasta and cook according to the package instructions (about 8-10 minutes) until al dente. Drain the pasta, reserving a cup of pasta water. Set aside.
Cook the Bacon
In a large skillet, cook the chopped bacon over medium heat for 5-7 minutes until crispy and browned. Once cooked, transfer bacon to a paper towel-lined plate to drain. Keep the bacon drippings in the skillet for later.
Brown the Ground Beef
In the same skillet, add the ground beef. Cook over medium heat, breaking it apart with a spoon until browned (about 6-8 minutes). Add the chopped onion and minced garlic, cooking for another 2-3 minutes until softened. Season with salt and pepper.
Make the Alfredo Sauce
In a separate saucepan, melt the butter over medium heat. Add heavy cream, stirring for 2 minutes to warm it through. Gradually whisk in the grated Parmesan and cheddar cheese until smooth and creamy. For extra flavor, stir in Dijon mustard and Worcestershire sauce. Taste and adjust seasoning with salt and pepper.
Combine the Ingredients
Add the cooked pasta to the skillet with the ground beef and onions. Pour the Alfredo sauce over the pasta, tossing to combine. If the sauce is too thick, add reserved pasta water a little at a time to reach your desired consistency.
Add Bacon and Cheese
Stir in the crispy bacon and shredded mozzarella cheese (if using), tossing everything together until the cheese is melted and evenly distributed.
Serve and Garnish
Plate the pasta and sprinkle with chopped green onions. Garnish with optional pickles, and drizzle with ketchup and mustard for that extra cheeseburger flavor.
Notes
If you prefer a spicier kick, add some red pepper flakes to the Alfredo sauce.
For a healthier option, use whole wheat pasta or try a gluten-free variety.
