Ingredients
2 ½ cups (300g) All-Purpose Flour
sifted
1 teaspoon Baking Powder
½ teaspoon Baking Soda
½ teaspoon Salt
1 cup (226g) Unsalted Butter
softened
1 ½ cups (300g) Granulated Sugar
3 large Eggs
room temperature
1 teaspoon Vanilla Extract
Zest of 2 large Lemons
½ cup (120ml) Buttermilk
room temperature
½ cup (120ml) Limoncello
1 ½ cups (180g) Powdered Sugar
sifted
¼ cup (60ml) Limoncello
1 tablespoon fresh Lemon Juice
Instructions
- Preheat your oven to 350°F (175°C) and grease a baking pan.
- In a bowl, whisk together the flour, baking powder, baking soda, and salt.
- In a separate bowl, cream the butter and sugar until light and fluffy.
- Add the eggs one at a time, mixing well after each addition, then stir in the vanilla extract and lemon zest.
- Alternate adding the dry ingredients and buttermilk to the butter mixture, starting and ending with the flour mixture, until just combined.
- Finally, fold in the Limoncello and pour the batter into the prepared pan.
- Bake for 25–30 minutes, or until a toothpick comes out clean.
- For the glaze, whisk together the powdered sugar, Limoncello, and lemon juice until smooth.
- Once the dessert has cooled, drizzle the glaze over the top before serving.
Notes
For a richer flavor, allow the desserts to sit for a few hours after glazing, as the flavors develop beautifully over time.
