Ingredients

4 oz cream cheese (or coconut butter)
2 tbsp butter (or additional coconut butter)
3 tbsp powdered sugar (or erythritol)
zest of one lemon
3 oz white chocolate chips (optional)
1 drop natural food coloring (or pinch turmeric) (optional for color)
Instructions
- In a mixing bowl, combine the cream cheese and butter until smooth.
- Add the powdered sugar and lemon zest, mixing until fully incorporated.
- Form the mixture into small balls and place them on a parchment-lined tray.
- Chill in the refrigerator for about 30 minutes.
- If using, melt the white chocolate chips and add food coloring if desired.
- Dip the chilled truffles in the melted chocolate, allowing excess to drip off.
- Place back on the tray and chill until the chocolate sets.
Notes
Feel free to substitute coconut butter for a dairy-free version. You can also roll the truffles in crushed nuts or coconut for added texture.
