16 oz mascarpone cheese
1 1/2 cups heavy cream
3/4 cup powdered sugar
Zest of 2 lemons
1/2 cup limoncello
1/4 cup fresh lemon juice
1/2 cup water
1 teaspoon vanilla extract
Pinch of salt
Instructions
- In a mixing bowl, whip the heavy cream with the powdered sugar until soft peaks form.
- In another bowl, mix together the mascarpone cheese, lemon zest, limoncello, lemon juice, vanilla extract, and a pinch of salt until smooth.
- Gently fold the whipped cream into the mascarpone mixture until fully combined.
- In a shallow dish, combine water and additional limoncello to create a soaking mixture.
- Quickly dip each ladyfinger into the soaking mixture, ensuring they are moist but not soggy.
- Layer half of the soaked ladyfingers in the bottom of a serving dish.
- Spread half of the mascarpone cream mixture over the ladyfingers.
- Repeat with the remaining ladyfingers and mascarpone mixture.
- Refrigerate for at least 4 hours or overnight to set.
- Serve chilled, garnished with extra lemon zest if desired.
Notes
For an extra zing, consider adding some lemon slices for garnish or a sprinkle of lemon zest on top before serving.
