Instructions
- Preheat your oven to 350°F (175°C) and grease two 9-inch round cake pans.
- In a large bowl, cream together the softened unsalted butter and granulated sugar until light and fluffy.
- Add in the large eggs one at a time, mixing well after each addition.
- In another bowl, whisk together the all-purpose flour, baking powder, and salt.
- Gradually add the dry ingredients to the wet mixture, alternating with the whole milk, starting and ending with the flour mixture. Mix until just combined.
- Stir in the fresh lemon juice, lemon zest, and pure vanilla extract until evenly combined.
- Divide the batter evenly between the prepared cake pans and smooth the tops.
- Bake for 25-30 minutes or until a toothpick inserted into the center comes out clean.
- Let the cakes cool in the pans for 10 minutes, then transfer to wire racks to cool completely.
- While the cakes cool, prepare the filling by whipping heavy cream until soft peaks form. Gradually add softened cream cheese and powdered sugar, mixing until smooth. Optionally, fold in lemon curd for extra flavor.
- Once the cakes are completely cool, place one layer on a serving plate and spread the creamy filling on top.
- Top with the second cake layer and apply a thin layer of whipped cream on top for decoration.
- Garnish with additional powdered sugar, lemon zest, or mint leaves for a beautiful presentation.
