This Lemon Blueberry Tart is a delightful dessert that combines the zesty flavor of lemon with the sweetness of blueberries, all nestled in a buttery shortbread crust.
Ingredients
1 teaspoon cornstarch
2 teaspoons lemon juice (or water)
1 cup (140g) fresh or frozen blueberries
2 teaspoons granulated sugar
1/2 cup (8 Tbsp; 113g) unsalted butter
1/4 cup (50g) granulated sugar
1 teaspoon pure vanilla extract
1/4 teaspoon salt
1 cup (125g) all-purpose flour
1 (14 ounce weight) can full-fat sweetened condensed milk
6 Tablespoons (90ml) lemon juice
1 teaspoon lemon zest
1 large egg yolk

Instructions
- Preheat the oven to 350°F (175°C).
- In a bowl, combine melted butter, granulated sugar, vanilla extract, and salt. Stir in flour until a dough forms.
- Press the dough into a tart pan evenly across the bottom and up the sides. Bake for 15-20 minutes or until lightly golden.
- For the blueberry sauce, in a small saucepan, mix cornstarch with lemon juice until smooth. Add blueberries and sugar, and cook over medium heat until thickened, about 5-7 minutes.
- In a separate bowl, whisk together sweetened condensed milk, lemon juice, lemon zest, and egg yolk until smooth.
- Pour the lemon mixture into the baked tart crust and top with the blueberry sauce. Bake for an additional 10-15 minutes.
- Allow to cool before serving. Garnish with lemon slices, fresh blueberries, extra blueberry sauce, and whipped cream if desired.
Notes
Make sure to let the tart cool completely before slicing for the best results. You can use fresh or frozen blueberries for the sauce, but do not thaw if using frozen.
