These Lemon Bars are the perfect blend of tangy and sweet, featuring a buttery shortbread crust and a luscious lemon filling.
Ingredients

3 cups all-purpose flour
2 1/2 cups for crust and 1/2 cup for filling
2/3 cups powdered sugar
1/2 tsp salt
12 tbsp unsalted butter melted
3 tbsp lemon zest
3 cups sugar
8 eggs large
room temperature
1 cup lemon juice fresh
Instructions
- Preheat the oven to 350°F (175°C) and grease a 9×13 inch baking pan.
- In a large bowl, mix 2 1/2 cups of flour, powdered sugar, and salt.
- Pour in the melted butter and mix until crumbly.
- Press the mixture firmly into the bottom of the prepared pan to form the crust.
- Bake the crust for 20 minutes or until lightly golden.
- In another bowl, whisk together the remaining 1/2 cup of flour, sugar, eggs, lemon juice, and lemon zest until smooth.
- Pour the lemon filling over the baked crust and return to the oven.
- Bake for an additional 10-15 minutes, until set.
- Allow to cool completely before dusting with powdered sugar and cutting into squares.
Notes
For a stronger lemon flavor, you can add more lemon zest. Ensure the eggs are at room temperature for a smoother filling.
