1 cup shredded cheese (cheddar

mozzarella

1/4 cup grated Parmesan cheese

1 large egg

1/4 cup all-purpose flour (plus more for dusting)

1/2 teaspoon garlic powder (optional)

1/2 teaspoon onion powder (optional)

Salt and pepper to taste

Oil for frying (vegetable or canola)


Instructions

  • In a mixing bowl, combine leftover mashed potatoes, shredded cheese, grated Parmesan cheese, egg, flour, garlic powder, onion powder, salt, and pepper. Mix until well combined.
  • Form the mixture into small balls or patties, dusting with additional flour if necessary.
  • Heat oil in a frying pan over medium heat. Fry the potato puffs in batches until golden brown, about 3-4 minutes on each side.
  • Remove from oil and drain on paper towels. Serve warm.
