Ingredients
2 cups leftover mashed potatoes
1 cup shredded cheese (cheddar
mozzarella
or your choice)
1/4 cup grated Parmesan cheese
1 large egg
1/4 cup all-purpose flour (plus more for dusting)
1/2 teaspoon garlic powder (optional)
1/2 teaspoon onion powder (optional)
Salt and pepper to taste
Oil for frying (vegetable or canola)
Instructions
- In a mixing bowl, combine leftover mashed potatoes, shredded cheese, grated Parmesan cheese, egg, flour, garlic powder, onion powder, salt, and pepper. Mix until well combined.
- Form the mixture into small balls or patties, dusting with additional flour if necessary.
- Heat oil in a frying pan over medium heat. Fry the potato puffs in batches until golden brown, about 3-4 minutes on each side.
- Remove from oil and drain on paper towels. Serve warm.
Notes
Feel free to add additional herbs or spices to the mixture for more flavor. These puffs can also be baked in the oven for a healthier alternative.
