Ingredients
1 ¾ cups all-purpose flour
½ cup powdered sugar
1 cup cold unsalted butter diced
½ teaspoon salt
1 cup granulated sugar
1 tablespoon culinary lavender buds
4 large eggs
1 cup fresh lemon juice
Zest of 2 lemons
1 cup powdered sugar
¼ cup all-purpose flour
Fresh lavender sprigs
Lemon slices
Instructions
- Preheat your oven to 350°F (175°C) and grease a 9×9 inch baking pan.
- In a bowl, mix together the flour, powdered sugar, and salt for the crust. Cut in the cold butter until the mixture resembles coarse crumbs. Press evenly into the bottom of the prepared baking pan.
- Bake for 20 minutes or until lightly golden. Remove from oven and let cool.
- In a separate bowl, whisk together granulated sugar, lavender buds, eggs, lemon juice, lemon zest, powdered sugar, and flour until smooth.
- Pour the filling over the cooled crust and return to the oven. Bake for an additional 20 minutes or until set.
- Allow to cool completely, then refrigerate for at least 2 hours before cutting into squares.
- Serve chilled, garnished with fresh lavender sprigs and lemon slices.
Notes
Feel free to adjust the amount of lavender to your taste; start with less if you are unsure. Ensure to refrigerate the bars for a firm texture before serving.
