Instructions

  • In a bowl, mix Gochujang, soy sauce, sesame oil, brown sugar, minced garlic, minced ginger, and rice vinegar to create the marinade.
  • Add the chicken thighs to the marinade and let them marinate for at least 30 minutes, or up to overnight in the refrigerator.
  • Preheat your grill or oven to medium-high heat. Cook the marinated chicken for about 6-8 minutes per side, or until cooked through and slightly charred.
  • While the chicken is cooking, prepare the bowls by placing a serving of cooked rice at the bottom of each bowl.
  • Slice the cooked chicken and arrange it over the rice, then top with sliced cucumbers, shredded carrots, edamame, and a side of kimchi.
