1 tbsp fresh lemon juice
Salt and finely ground pepper
2 x thin white fish fillets (120-150g / 4-5oz each)
skinless boneless

2 tbsp white flour
2 tbsp oil (I use canola)
Lemon wedges
Finely chopped parsley

Instructions
- In a small saucepan, melt the unsalted butter over medium heat.
- Once melted, stir in the fresh lemon juice and season with salt and finely ground pepper. Keep warm on low heat.
- Season the fish fillets with salt and pepper, then coat each fillet lightly with white flour.
- In a large skillet, heat the oil over medium-high heat.
- Once the oil is hot, add the fish fillets and cook for about 3-4 minutes on each side, or until golden brown and cooked through.
- Remove the fish from the skillet and drain on paper towels.
- Serve the pan-fried fish topped with the warm lemon butter sauce, lemon wedges, and finely chopped parsley if desired.
