8 oz dark chocolate (70% cocoa or sugar-free)
1/2 cup erythritol or monk fruit sweetener
1/4 cup unsweetened cocoa powder
1 tsp pure vanilla extract
Instructions
- In a microwave-safe bowl, melt the dark chocolate until smooth.
- In a mixing bowl, combine the melted chocolate with cream cheese, sweetener, cocoa powder, and vanilla extract. Mix until well blended.
- Chill the mixture in the refrigerator for about 15 minutes until it stiffens slightly.
- Using your hands, form small balls from the mixture and roll them in cocoa powder for coating.
- Place the truffles on a parchment-lined tray and chill for another 15 minutes before serving.
