1/3 cup granulated sweetener
1 tbsp baking powder
1/2 tsp salt
2/3 cup plain yogurt or coconut cream
1/4 cup lemon juice
3 eggs or flax eggs
1 tbsp lemon zest
Instructions
- Preheat your oven to 350°F (175°C) and grease a loaf pan.
- In a large bowl, mix the almond flour, granulated sweetener, baking powder, and salt.
- In another bowl, combine the yogurt (or coconut cream), lemon juice, eggs (or flax eggs), and lemon zest.
- Pour the wet ingredients into the dry ingredients and mix until just combined.
- Pour the batter into the prepared loaf pan and smooth the top.
- Bake in the preheated oven for 30-35 minutes, or until a toothpick inserted into the center comes out clean.
- Allow to cool in the pan for 10 minutes before transferring to a wire rack to cool completely.
Notes
For a nut-free option, substitute almond flour with a suitable flour blend. Adjust sweetness based on your preference.
