Ingredients
750 g boneless skinless chicken thighs
1 fresh lemon juice
2 garlic cloves minced
1 tsp dried thyme
1 tsp rosemary
1 tsp salt
1/2 tsp cracked black pepper
2 tbsp olive oil
1 tbsp olive oil
250 g sliced fresh mushrooms
2 garlic cloves minced
1 tsp fresh parsley chopped
1 tsp dried thyme
1 tsp dried rosemary
1 cup heavy cream
1 tsp nutmeg
salt and black pepper
1/2 cup fresh parmesan cheese shredded
Instructions
- Preheat the oven to 375°F (190°C).
- In a bowl, mix the chicken thighs with lemon juice, minced garlic, dried thyme, rosemary, salt, and black pepper.
- Heat 2 tablespoons of olive oil in a skillet over medium-high heat and sear the chicken thighs for 5-6 minutes on each side until golden brown.
- Remove the chicken and set aside. In the same skillet, add 1 tablespoon of olive oil and sauté the mushrooms and minced garlic until they are softened.
- Stir in parsley, dried thyme, dried rosemary, heavy cream, nutmeg, salt, and pepper, and let it simmer for about 5 minutes until it thickens.
- Add the parmesan cheese to the sauce and mix well.
- Return the chicken thighs to the skillet, ensuring they are covered with the sauce, and bake in the oven for 20 minutes or until fully cooked.
- Serve hot, garnished with additional parsley if desired.
Notes
For a lower calorie option, you can use less heavy cream or substitute with a low-fat alternative. Serve with steamed vegetables for a complete meal.
