Ingredients
1 cup almond flour
1 tbsp coconut flour
1 1/2 tsp arrowroot starch
1 tsp xanthan gum
1/2 tsp cinnamon
1/2 tsp baking soda
1/8 tsp salt
2 tbsp salted butter
2 tbsp cream cheese
5 1/2 tbsp allulose
3 tbsp powdered monkfruit/erythritol sweetener
1 egg
1/2 tsp vanilla extract
1/2 a large apple
1–2 tbsp granular sweetener
1/4 tsp cinnamon
3 tbsp powdered monkfruit/erythritol sweetener
1/8 tsp vanilla extract
1 tbsp light cream
Instructions
- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a large mixing bowl, combine the almond flour, coconut flour, arrowroot starch, xanthan gum, cinnamon, baking soda, and salt. Mix well.
- In another bowl, beat together the butter and cream cheese until smooth. Add the allulose, powdered sweetener, egg, and vanilla extract. Mix until fully combined.
- Gradually add the dry ingredients to the wet mixture, stirring until a dough forms. Fold in the chopped apple.
- Scoop tablespoon-sized portions of dough onto the prepared baking sheet, spacing them apart.
- In a small bowl, mix the granular sweetener and cinnamon for the topping. Sprinkle over the cookies.
- Bake for 25-30 minutes or until the cookies are golden brown. Let cool.
- For the glaze, whisk together the powdered sweetener, vanilla extract, and cream until smooth. Drizzle over cooled cookies.
Notes
These cookies can be stored in an airtight container for several days. Optional xanthan gum improves the texture, but can be omitted if necessary.
