Ingredients
1/2 cup mayonnaise
1/2 head iceberg lettuce
shredded finely
1/2 red onion
sliced thinly
1/3 cup banana peppers
sliced
1 tbsp red wine vinegar
1 tsp garlic powder
1 tsp oregano
1/2 tsp salt
Pepper
to taste
3 sub rolls
1/4 pound salami
1/4 pound pepperoni
1/4 pound turkey
1/4 pound provolone cheese
1 tomato
sliced
1/3 cup parmesan cheese
grated
Instructions
- In a mixing bowl, combine mayonnaise, shredded iceberg lettuce, sliced red onion, banana peppers, red wine vinegar, garlic powder, oregano, salt, and pepper to create the grinder salad mixture.
- Slice the sub rolls in half and layer the meats (salami, pepperoni, turkey) on the bottom half.
- Add slices of provolone cheese and tomato on top of the meats.
- Generously scoop the grinder salad mixture over the top before sprinkling with grated parmesan cheese.
- Top with the other half of the sub rolls and serve immediately.
Notes
For an extra crunch, consider adding some chopped bell peppers or cucumbers into the grinder salad.
