Instructions
- Preheat your oven to 400°F (200°C).
- Cube the halloumi cheese and chop all vegetables into bite-sized pieces.
- In a large bowl, combine the halloumi, zucchini, bell pepper, cherry tomatoes, and red onion with olive oil, oregano, salt, and pepper.
- Spread the mixture evenly on a baking sheet.
