Ingredients
1 cup all-purpose flour
2 tablespoons sugar
2 teaspoons baking powder
1/2 teaspoon baking soda
1/4 teaspoon salt
1 cup buttermilk (or milk + 1 tablespoon vinegar for a substitute)
1 large egg
2 tablespoons melted butter (or coconut oil for a dairy-free option)
1 teaspoon vanilla extract
Food coloring (optional)
Optional toppings: maple syrup
fresh berries
whipped cream
or chocolate chips
Instructions
- In a mixing bowl, combine the flour, sugar, baking powder, baking soda, and salt. Whisk until well combined.
- In another bowl, mix the buttermilk, egg, melted butter, and vanilla extract. If using food coloring, add it here.
- Pour the wet ingredients into the dry ingredients and stir until just combined. Be careful not to overmix; a few lumps are okay.
- Heat a non-stick skillet or griddle over medium heat. Lightly grease with butter or oil.
- Use a heart-shaped cookie cutter and pour the batter into the cutter on the skillet. Cook until bubbles form on the surface, then gently remove the cutter and flip the pancake to cook the other side until golden brown.
- Repeat with the remaining batter, greasing the pan as needed.
- Serve warm with your choice of toppings such as maple syrup, fresh berries, whipped cream, or chocolate chips.
