Description

Ingredients

2 small spaghetti squash

1 tbsp unsalted butter

1 tbsp vegetable oil

2 small chicken breasts

boneless and skinless

4 garlic cloves

minced

1 tsp Italian seasoning

1/2 cup chicken broth

2 tsp kosher salt

1 cup parmesan cheese

freshly grated

1 tbsp vegetable oil

1 cup heavy cream

1 cup sun-dried tomatoes

drained

2 cups chopped fresh spinach


Instructions

  • Preheat the oven to 400°F (200°C). Cut the spaghetti squash in half lengthwise and scoop out the seeds. Drizzle with olive oil and salt, then place cut-side down on a baking sheet. Bake for 30-40 minutes until tender.
  • In a large skillet, melt the butter and vegetable oil over medium heat. Add the chicken breasts and cook for about 5-7 minutes on each side until golden brown and cooked through. Remove from the skillet and let rest.
  • In the same skillet, add the minced garlic and sauté for 1 minute until fragrant. Stir in the Italian seasoning, chicken broth, and kosher salt, cooking until the broth reduces by half.
  • Lower the heat and add the heavy cream, sun-dried tomatoes, and chopped spinach. Cook until the spinach wilts and the sauce thickens slightly.
  • Slice the cooked chicken and add it back to the sauce, then stir in the parmesan cheese until melted.
  • Once the spaghetti squash is cooked, use a fork to scrape the flesh into strands and divide among plates. Top with the chicken and garlic cream sauce before serving.

Notes

Feel free to add other vegetables to the sauce based on your preferences. Adding a pinch of red pepper flakes can also give it a nice kick.
