Ingredients
1 lb ground beef (the 80/20 blend gives best flavor)
1 small onion
diced (about ¾ cup)
2 cloves garlic
minced
2 cups beef broth (low-sodium if possible)
1 cup heavy cream
1 tbsp Worcestershire sauce
1 tsp Dijon mustard
1 tsp paprika (smoked or sweet—your choice!)
9 oz packaged cheese tortellini (fresh or frozen)
1 tbsp olive oil
Salt and pepper to taste
Fresh parsley for garnish
Instructions
- In a large skillet, heat olive oil over medium heat and add the diced onion. Sauté for 2-3 minutes until translucent.
- Add the minced garlic and ground beef to the skillet, breaking the beef apart as it cooks. Cook until the beef is browned, about 5-7 minutes. Season with salt, pepper, and paprika.
- Pour in the beef broth, Worcestershire sauce, and Dijon mustard. Bring to a simmer.
- Stir in the heavy cream, then add the tortellini. Cook for an additional 5-7 minutes, or until the tortellini are tender and cooked through.
- Garnish with fresh parsley before serving.
Notes
For a shortcut, you can use frozen tortellini, and feel free to add your favorite vegetables for extra nutrition.
