Ingredients
100 g Unsalted Butter Melted
200 g Digestive Biscuits
300 g Full-Fat Soft Cream Cheese
50 g Icing Sugar
1 teaspoon Vanilla Extract
150 ml Double Cream
150 g Easter Chocolates
125 ml Decoration Double Cream
150 g Sprinkles/Grated Chocolate/Additional Easter Chocolates
Instructions
- Crush the digestive biscuits in a bowl and mix with the melted butter until fully combined.
- Press the biscuit mixture into the bottom of mini cheesecake molds to form a base.
- In a separate bowl, beat the cream cheese, icing sugar, and vanilla extract until smooth.
- Gently fold in the whipped double cream and crushed Easter chocolates until the mixture is well combined.
- Spoon the cheesecake filling over the biscuit bases and smooth the tops.
- Chill the cheesecakes in the refrigerator for at least 4 hours or until set.
- Before serving, whip the decoration double cream with icing sugar and pipe or spoon on top of each cheesecake.
- Decorate with sprinkles, grated chocolate, or additional Easter chocolates, then serve cold.
Notes
For a chocolatey twist, consider substituting digestive biscuits with chocolate-coated biscuits. Make sure not to skip the chilling time for the best texture.
