2 lbs. carrots peeled and cut into 2-inch chunks

2 tablespoons extra virgin olive oil

½ teaspoon kosher salt

¼ teaspoon fresh ground black pepper

3 tablespoons butter

3 tablespoons honey

â…› teaspoon cayenne pepper

½ tablespoon fresh thyme or fresh parsley


Instructions

  • Preheat your oven to 425°F (220°C).
  • In a large bowl, toss the carrot chunks with olive oil, salt, and pepper until evenly coated.
  • Spread the carrots on a baking sheet in a single layer.
  • Roast in the preheated oven for 20 minutes.
  • In a small saucepan, melt the butter and stir in the honey and cayenne pepper. Bring to a simmer.
  • After 20 minutes, remove the carrots from the oven and drizzle the honey mixture over them. Stir to coat.
  • Return the baking sheet to the oven and roast for an additional 10 minutes or until the carrots are tender and caramelized.
  • Remove from the oven and garnish with fresh thyme or parsley before serving.

Notes

For an extra kick, increase the cayenne pepper to taste. You can also try different herbs like rosemary or dill for variety.
