- Knead the dough for about 5-7 minutes until smooth, then form it into a ball and let it rest covered in the refrigerator for 30 minutes.
- Roll out the cold butter between two sheets of parchment paper into a rectangle. Refrigerate until the dough is ready.
- Roll out the chilled dough into a large rectangle, then place the butter slab in the center. Fold the dough over the butter to encase it completely.
- Roll out the dough again into a rectangle, then fold it into thirds like a business letter. Repeat this process two more times, resting the dough in the fridge for 30 minutes between each fold.
- After the final fold, roll the dough out into a large rectangle, then cut it into triangles. Roll each triangle tightly starting from the base.
- Place the rolled croissants on a baking sheet, cover, and let them rise until doubled, about 1-2 hours.
- Preheat your oven to 400°F (200°C). Brush the croissants with the egg wash before baking.
