Homemade Cheese Tortellini is a delightful Italian dish featuring fresh pasta filled with a creamy blend of ricotta, Parmesan, and spinach, perfect for a comforting meal.
Ingredients
3 â…“ cups (426 grams) all purpose flour
4 large eggs
¼ teaspoon salt
¼ cup olive oil
1 cup (240 grams) fresh ricotta
1 extra large egg
½ cup (50 grams) Parmesan cheese
freshly grated
2 tablespoons fresh spinach
½ teaspoon dried basil
½ teaspoon salt or to taste
â…› teaspoon freshly ground black pepper
Small pinch of nutmeg
Instructions
- In a large mixing bowl, combine the flour and salt. Make a well in the center and add the eggs and olive oil. Mix until a dough forms.
- Knead the dough on a floured surface for about 10 minutes until smooth. Wrap in plastic wrap and let it rest for 30 minutes.
- Meanwhile, in a bowl, mix the ricotta, egg, Parmesan cheese, spinach, basil, salt, black pepper, and nutmeg until well combined.
- Roll out the pasta dough thinly and cut into squares. Place a small amount of filling in the center of each square.
- Fold the pasta over the filling to create a triangle, then fold the corners together to form a tortellini shape. Seal well.
- Bring a large pot of salted water to a boil. Cook the tortellini for 3-5 minutes until they float to the surface. Drain and serve with your favorite sauce.
Notes
Make sure to knead the pasta dough well for the best texture. You can also freeze the uncooked tortellini for later use.
